Fish Rings

things you need:

  • 3/4 kg freshwater fish
  • 1 small baguette
  • 250 ml single cream
  • 200 gram butter
  •  2 eggs
  • 200 gram plain flour
  • Salt & Pepper
  • 1 small jar horseradish sauce

Here’s how:

  1. Make sure the fish is clean of bones and skin. Put pieces in a bowl
  2. Pull the baguette into small pieces and soak in cream for at least 5 min
  3. Chop the onion and fry till glossy with the 1 tea spoon of butter
  4. Add two eggs to the onion. Mix until set. Add salt and pepper and blend all together
  5. Roll the mass into small rolls as thick as your finger. Use flour as a base for rolling
  6. Form rings and fry briefly with the rest of butter
  7. Dry on a paper towel
  8. Serve with the horseradish sauce
